Chauffer l\u2019huile dans une casserole. Faire frire l\u00e9g\u00e8rement les carottes et les oignons jusqu\u2019\u00e0 ce qu\u2019ils soient tendres (environ 5 minutes). Ajouter le riz, puis verser l\u2019eau jusqu\u2019\u00e0 ce qu\u2019il soit couvert. Ajouter les fruits secs, apr\u00e8s les avoir hach\u00e9s. Ajouter le sel et la cannelle. Porter \u00e0 \u00e9bullition, couvrir la casserole avec le couvercle, r\u00e9duire la flamme au minimum et cuire pendant environ 7 minutes. \u00c9teindre le feu et laisser reposer pendant 5 minutes. Par cons\u00e9quent, la cuisine Kirghiz a absorb\u00e9 des \u00e9l\u00e9ments de toutes les cultures avec lesquelles elle est entr\u00e9e en contact, m\u00eame s\u2019il est encore possible de trouver des plats qui conservent leur identit\u00e9 originale et nationale. Les plats Kirghiz gardent les liens avec les traditions nomades du pays. Les bases de l\u2019alimentation Kirghiz \u2013 et de celle de la plupart des peuples traditionnellement nomades de l\u2019Asie centrale \u2013 sont le mouton bouilli, le pain rond grill\u00e9, le riz et le th\u00e9, m\u00e9lang\u00e9s avec du lait de mouton ou de cheval. Les kirghiz aiment la viande de cheval et utilisent de la cr\u00e8me sure, du yogourt et des saucisses pour aromatiser leurs aliments. La viande est l\u2019un des \u00e9l\u00e9ments essentiels de la cuisine kirghize, puisque la vie nomade ne leur permettait pas de cultiver des fruits et l\u00e9gumes. Au Kirghizistan, de nombreux plats ont une importance rituelle et sont li\u00e9s \u00e0 des f\u00eates particuli\u00e8res. M\u00eame si ces plats sont tr\u00e8s int\u00e9ressants, malheureusement beaucoup d\u2019entre eux ont \u00e9t\u00e9 oubli\u00e9s et sont tomb\u00e9s en d\u00e9su\u00e9tude, tandis que d\u2019autres, qui avaient auparavant un sens rituel, se sont progressivement transform\u00e9s en plats quotidiens. Les hommes sont souvent consid\u00e9r\u00e9s comme \u00e9tant les meilleurs cuisiniers, puisque beaucoup de gens pensent que les femmes ruinent les aliments qu\u2019elles cuisinent pour les autres &#8211; m\u00eame si dans la yourte (la maison mobile utilis\u00e9e par les nomades asiatiques) la cuisine est plac\u00e9e dans le c\u00f4t\u00e9 d\u00e9di\u00e9 aux femmes. Si dans plusieurs <i>Ashkana (<\/i>salons de th\u00e9 ou caf\u00e9s) et restaurants les cuisiniers sont des hommes, les femmes sont plus couramment employ\u00e9es dans les locaux servant la cuisine russe ou europ\u00e9enne. L\u2019une des caract\u00e9ristiques essentielles de la cuisine Kirghize est que les plats doivent pr\u00e9server leur go\u00fbt et leur aspect. Par exemple, il est rare de trouver des plats contenant de la viande hach\u00e9e ou \u00e9minc\u00e9e (m\u00eame s\u2019il y a quelques exceptions).
