Placer les cuisses de poulet dans une casserole, ajouter le sel, le poivre, l\u2019oignon hach\u00e9 et 360 ml d\u2019eau. Porter \u00e0 \u00e9bullition, puis baisser la flamme au minimum et cuire pendant environ 1 heure et 30 minutes, en couvrant la casserole avec le couvercle. Retirer les cuisses de poulet et l\u2019oignon de la casserole et les laisser refroidir. S\u2019il reste encore un peu de liquide dans la casserole, le laisser r\u00e9duire jusqu\u2019\u00e0 ce qu\u2019il ne reste qu\u2019un demi-verre. \u00c9teindre le feu et verser le liquide dans un bol. Quand le poulet est froid, retirer la viande des os et la casser, la mettre dans le liquide et remuer. Laisser le poulet au r\u00e9frig\u00e9rateur pendant environ 30-40 minutes. Ce passage peut m\u00eame \u00eatre fait quelques heures auparavant. Laver le riz jusqu\u2019\u00e0 ce que l\u2019eau soit claire. Dans une casserole, chauffer une cuiller\u00e9e d\u2019huile et r\u00f4tir le riz. Porter l\u2019eau sal\u00e9e \u00e0 \u00e9bullition et la verser sur le riz, en le couvrant. Porter \u00e0 nouveau \u00e0 \u00e9bullition, couvrir la casserole et r\u00e9duire la flamme au minimum. Laisser cuire environ 6 minutes, \u00e9teindre le feu et laisser reposer pendant environ 10 minutes, sans enlever le couvercle. Chauffer le four \u00e0 200\u00b0C en mode statique. Dans un bol, remuer l\u2019\u0153uf, le yogourt et 15 ml d\u2019huile. Ajouter 180 g de riz cuit et un demi-sachet de safran. Dans un plat \u00e0 four, verser 45 ml d\u2019huile et le beurre, le mettre au four pendant environ 5 minutes, jusqu\u2019\u00e0 ce que le beurre ait fondu et commence \u00e0 gr\u00e9siller. Retirer le plat du four.<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\"><b>Composition : <\/b><\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Premi\u00e8re couche : verser le m\u00e9lange de riz et de yogourt et couvrir le fond du plat \u00e0 four. Deuxi\u00e8me couche : verser la moiti\u00e9 du riz blanc sur la surface et \u00e9taler au-dessus la moiti\u00e9 du m\u00e9lange d\u2019\u00e9pices. Troisi\u00e8me couche : remuer soigneusement le poulet avec le liquide et le verser sur le riz. Quatri\u00e8me couche : terminer avec le riz blanc, couvrant le poulet et pressant le riz avec le dos d\u2019une cuill\u00e8re. \u00c9taler au-dessus le m\u00e9lange d\u2019\u00e9pices. R\u00e9partir les d\u00e9s de beurre sur la surface du riz. Couvrir le plat \u00e0 four avec un papier d\u2019aluminium, en scellant les c\u00f4t\u00e9s. Couper les angles et le centre du papier d\u2019aluminium \u00e0 l\u2019aide d\u2019un couteau pour cr\u00e9er quelques fissures pour laisser sortir la vapeur. Mettre au four pendant environ 45 minutes, ou jusqu\u2019\u00e0 ce que le riz soit dor\u00e9. Le fond de Tahchin devrait \u00eatre plus sombre que les c\u00f4t\u00e9s. Sinon, remettre au four. Une fois pr\u00eat, retirer le papier d\u2019aluminium et introduire un couteau le long du bord du plat. Certains \u00e9l\u00e9ments de la cuisine iranienne ont \u00e9t\u00e9 adopt\u00e9s par la cuisine du nord de l\u2019Inde. Les plats principaux de la cuisine iranienne sont des combinaisons de riz avec de l\u2019agneau, du poulet ou du poisson, ainsi que des l\u00e9gumes et quelques vari\u00e9t\u00e9s d\u2019herbes fra\u00eeches. Afin d\u2019atteindre le go\u00fbt \u00e9quilibr\u00e9 caract\u00e9ristique de la cuisine iranienne, safran, cannelle et persil sont sagement m\u00e9lang\u00e9s et ajout\u00e9s \u00e0 certains plats. L\u2019emploi du riz dans la cuisine iranienne a connu une rapide expansion pendant le XVIe si\u00e8cle. Traditionnellement, le riz \u00e9tait pr\u00e9sent dans la cuisine du nord de l\u2019Iran et dans les maisons des riches, tandis que dans le reste du pays le pain \u00e9tait l\u2019\u00e9l\u00e9ment principal. Aujourd\u2019hui, les vari\u00e9t\u00e9s de riz les plus appr\u00e9ci\u00e9es gr\u00e2ce \u00e0 leur saveur sont les vari\u00e9t\u00e9s cultiv\u00e9es dans le nord de l\u2019Iran.<span class=\"Apple-converted-space\">\u00a0 <\/span><i>Tahchin Morgh est<\/i> un plat \u00e0 base de riz. Il est fait de deux parties : la couche inf\u00e9rieure, appel\u00e9e <i>Tahdig<\/i> (<i>Tah<\/i>= inf\u00e9rieur+ <i>creuser<\/i>= casserole), obtenue en m\u00e9langeant le poulet, le safran et les autres ingr\u00e9dients et la couche sup\u00e9rieure faite uniquement de riz blanc.
