En una olla, poner agua a hervir, a\u00f1adir la carne despu\u00e9s de haber quitado la parte grasa, el jengibre y dejar hervir un par de minutos. Apagar el fuego. Colar la carne con una espumadera, filtrar el agua y guardarla para cocer el arroz. Calentar el aceite en una sart\u00e9n. A\u00f1adir la grasa extra\u00edda de la carne y cocinar hasta que quede crujiente. Bajar el fuego y cocinar durante unos 8 minutos, hasta que la grasa tome color. A\u00f1adir las cebollas y cocinar hasta que est\u00e9n transparentes. Levantar el fuego, a\u00f1adir la carne escaldada y dorarla por todos los lados. A\u00f1adir la salsa de soja, el comino y remover con cuidado. Cubrir con una tapa y cocinar a fuego medio durante 20 minutos, a\u00f1adiendo un poco del agua utilizada para escaldar la carne. A\u00f1adir las zanahorias y la uva pasa y cocinar durante 5 minutos. Apagar el fuego, verter el arroz en la sart\u00e9n y distribuirlo uniformemente en la superficie. Verter el l\u00edquido guardado hasta cubrir el arroz. Llevar a ebullici\u00f3n, tapar la olla y bajar el fuego al m\u00ednimo. Cocer durante unos 5 minutos, apagar el fuego y dejar reposar unos 8-10 minutos. Las ciudades de esta regi\u00f3n, al estar situadas a lo largo de la Ruta de la Seda, han sido consideradas durante siglos un puerto seguro y han servido de apoyo durante el paso entre el Oriente Medio y el Imperio Chino. Hace mucho tiempo, m\u00e1s all\u00e1 del \u00faltimo puesto de avanzada de la Gran Muralla China, los prisioneros del Emperador eran expulsados en esta zona cerca del desierto, con la certeza de que morir\u00edan. Hoy, la zona est\u00e1 llena de vida, colores y sabores. Los sabores predominantes son los asociados al Oriente Medio: comino, chili, ajo y azafr\u00e1n hacen sabrosos los platos t\u00edpicos a base de pimientos, tomates y berenjenas. La carne es t\u00edpica en los platos de esta regi\u00f3n y en muchas preparaciones se cocina junto con el arroz, el as\u00ed llamado <i>Polo<\/i>. Normalmente, los grupos \u00e9tnicos presentes en la regi\u00f3n de Sinkiang tienen diferentes m\u00e9todos para cocinar y comer sus alimentos.
