Lavar el arroz hasta que el agua sea clara. Escurrirlo y poner a parte. Calentar el aceite en una sart\u00e9n (mejor un wok); echar la carne y dorarla; a\u00f1adir las cebollas y cocinar hasta que est\u00e9n doradas; a\u00f1adir las zanahorias y seguir cocinando durante 5 minutos. A partir de ahora, no hay que remover los ingredientes, sino a\u00f1adirlos capa a capa. Verter 600 ml de agua y los garbanzos remojados. Llevar el agua a ebullici\u00f3n, bajar el fuego y a\u00f1adir las cabezas de ajo, retirando s\u00f3lo la piel exterior, sin separar los dientes; cocer durante 50 minutos con la tapa puesta. A\u00f1adir la uva pasa y mantener la cocci\u00f3n durante 10 minutos m\u00e1s; a\u00f1adir la c\u00farcuma, el comino, el cilantro y la sal. Cocer a fuego bajo durante 10 minutos. Retirar las cabezas de ajo, a\u00f1adir el arroz y cubrirlo con agua. Llevarlo a ebullici\u00f3n. Bajar el fuego al m\u00ednimo y cocinar hasta que el arroz est\u00e9 cocido (unos 5 minutos). La raz\u00f3n es que Uzbekist\u00e1n es un pa\u00eds musulm\u00e1n, por lo que la carne de cerdo est\u00e1 casi ausente en los platos tradicionales. A diferencia de sus vecinos n\u00f3madas, los uzbekos son un pueblo residente desde hace siglos. Entre desiertos y monta\u00f1as, en los oasis y valles f\u00e9rtiles, los uzbecos cultivaban trigo y criaban animales domesticados. La consiguiente abundancia de productos permiti\u00f3 a este pueblo expresar su fuerte tradici\u00f3n hospitalaria, que contribuy\u00f3 a enriquecer su cocina. El pan redondo, llamado <i>lepyoshka<\/i>, y el arroz son las bases de la cocina uzbeca. En los mercados se puede encontrar una amplia selecci\u00f3n de melones, frutas, verduras, fruta deshidratada y fruta seca. La mejor comida uzbeca se sirve en casas privadas e incluye platos sencillos y sin pretensiones. Las estaciones, sobre todo el invierno y el verano, afectan mucho a la composici\u00f3n de los platos. En verano, las frutas, las verduras y la fruta seca son omnipresentes. La dieta invernal se compone tradicionalmente de frutas y verduras deshidratadas o en conserva.<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\"><b>El origen del <i>Plov<\/i> est\u00e1 ligado a una leyenda<\/b>: se dice que un pr\u00edncipe se enamor\u00f3 de una hermosa muchacha que pertenec\u00eda a una familia pobre y humilde. Como no pod\u00eda casarse con ella, el pr\u00edncipe empez\u00f3 a rechazar la comida; para intentar curarlo, el rey invit\u00f3 a un gran m\u00e9dico que sugiri\u00f3 dar al pr\u00edncipe un plato cal\u00f3rico: el \u00ab<i>Palov Osh<\/i>\u00ab. Esto explica la presencia de este plato en las bodas uzbecas.
