Wasser in einem Topf zum Kochen bringen, das Fett vom Fleisch entfernen und beiseitestellen. Das vom Fett befreite Fleisch und den Ingwer in den Topf geben und ein paar Minuten kochen lassen. Den Topf vom Herd nehmen. Das Fleisch mit einer Schaumkelle aus dem Topf nehmen, das Wasser filtern und wieder in den Topf geben, um den Reis zu garen. Das \u00d6l in einer Pfanne erhitzen. Das entfernte Fleischfett in die Pfanne geben und knusprig braten. Die Hitze reduzieren und das Fett ungef\u00e4hr 8 Min. d\u00fcnsten, bis es Farbe annimmt. Die Zwiebel hinzuf\u00fcgen und glasig d\u00fcnsten. Die Hitze erh\u00f6hen, das blanchierte Fleisch hinzuf\u00fcgen und von allen Seiten br\u00e4unen lassen. Die Sojasauce und den Kreuzk\u00fcmmel hinzuf\u00fcgen und gut umr\u00fchren. Die Pfanne abdecken und das Ganze bei m\u00e4\u00dfiger Hitze 20 Min. garen und ein wenig von dem zum Blanchieren des Fleischs genutzten Wasser hinzuf\u00fcgen. Die Karotten und die Rosinen zugeben und 5 Min. garen. Die Pfanne vom Herd nehmen. Den Reis in die Pfanne geben und gleichm\u00e4\u00dfig verteilen. Den beiseitegestellten Fleischsud \u00fcber den Reis gie\u00dfen, bis dieser bedeckt ist. Den Reis zum Kochen bringen, die Pfanne mit einem Deckel abdecken und die Hitze auf die geringste Stufe schalten. Etwa 5 Min. garen, die Pfanne vom Herd nehmen und zirka 8 bis 10 Min. ruhen lassen. In der dortigen K\u00fcche dominieren die Aromen, die mit dem Mittleren Osten verkn\u00fcpft werden: Kreuzk\u00fcmmel, Chili, Knoblauch und Safran sorgen f\u00fcr schmackhafte typische Gerichte auf Basis von Paprika, Tomaten und Auberginen. Fleisch geh\u00f6rt zu den typischen Gerichten dieser Region und oft wird es zusammen mit Reis gegart, dem sog. Polo. Bei Zubereitung und Verzehr der Gerichte pflegen die in der Region Xinjiang vertretenen ethnischen Gruppe unterschiedliche Traditionen.
