Abgie\u00dfen und beiseitestellen. Die Karotten putzen und hacken. Den Knoblauch nicht sch\u00e4len. Das \u00d6l in einer Pfanne erhitzen, das Fleisch hinzuf\u00fcgen und einige Minuten anbraten. Die klein geschnittene Zwiebel, die gehackten Karotten, die Knoblauchzehe und die gesch\u00e4lten und geviertelten Quitten (oder Kartoffeln) zugeben. Die Pfanne abdecken und das Ganze 25 Min. garen. Den Knoblauch und die Quitten (oder Kartoffeln) aus der Pfanne nehmen und die Quitten (oder Kartoffeln) beiseitestellen. Den Reis in die Pfanne geben und gesalzenes Wasser aufgie\u00dfen, bis der Reis bedeckt ist, dann die Pfanne erneut abdecken und das Ganze weitere 5 Min. garen. Keinesfalls umr\u00fchren, w\u00e4hrend der Reis gart. In der Zwischenzeit die Eier in einem anderen Topf hart kochen. Wenn das Gericht gar ist, die Quitten (oder Kartoffeln) wieder hinzuf\u00fcgen und ggf. mit Salz abschmecken. Gut umr\u00fchren. Der importierte Reis wurde als Shali bezeichnet. Es handelte sich um eine k\u00f6stliche Sorte, die gegen gro\u00dfe Mengen von Iana Pamiri eingetauscht wurde. Die meisten Gerichte enthalten kein Fleisch, aber eine F\u00fclle von Gem\u00fcse. Wie auch in den Nachbarl\u00e4ndern werden in Tadschikistan fast alle Fleischgerichte mit Hammel zubereitet. Traditionelle Speisen enthalten auch Reis und Bohnen, die auf unterschiedliche Art und Weise zubereitet werden. Die popul\u00e4rsten Gerichte des Lands sind Palov (oder Palav oder Pilaf) und Manty. 2016 wurde Oshi Palav von der UNESCO zum immateriellen Kulturerbe der Menschheit erkl\u00e4rt.
