Vom Herd nehmen, die Petersilie hinzuf\u00fcgen und umr\u00fchren. Das Fleisch in eine Sch\u00fcssel geben und abk\u00fchlen lassen. Die Kartoffel mit Schale in einem Topf mit Wasser weich kochen. Die gekochte Kartoffel aus dem Wasser nehmen, das Wasser salzen, den Reis hinzuf\u00fcgen und 20 Min. garen. Die Kartoffel sch\u00e4len. Den Reis in eine Sch\u00fcssel geben, von Hand mit der zerkleinerten Kartoffel gut vermengen. Mehl hinzuf\u00fcgen, bis die Masse klebrig ist. Die Masse in 16 gleiche Teile teilen und mit angefeuchteten H\u00e4nden B\u00e4llchen formen. Ein B\u00e4llchen in die hohle linke Hand nehmen und mit dem Zeigefinger der rechten Hand in der Mitte eindr\u00fccken, um eine Kuhle auszubilden. Die Kuhle ausweiten, bis eine Teigh\u00fclle entsteht. Die H\u00e4nde m\u00fcssen immer angefeuchtet sein, um die Zubereitung einer d\u00fcnnen H\u00fclle zu erleichtern. Die Fleischf\u00fcllung in die Teigh\u00fclle f\u00fcllen. Daraus unter sanftem Druck eine ovale Krokette formen. Die restlichen Kroketten ebenso vorbereiten. Die Gelin Budu bis zum Frittieren in den K\u00fchlschrank stellen. Sonnenblumen\u00f6l in einer Pfanne erhitzen und immer 4 bis 5 Kroketten zusammen goldgelb frittieren. Hauptmerkmal der turkmenischen K\u00fcche ist deren Schlichtheit, sowohl was die Zutaten als auch die Zubereitungsmethoden betrifft. Die turkmenische K\u00fcche \u00e4hnelt den L\u00e4nderk\u00fcchen in der T\u00fcrkei, im Mittleren Osten, in China und in den muslimischen L\u00e4ndern mehr als der traditionellen russischen K\u00fcche. Der Grund daf\u00fcr ist, dass Turkmenistan ein muslimisches Land ist, weshalb in der K\u00fcche auf Schweinefleisch verzichtet wird und stattdessen Hammel, Schaf und Gefl\u00fcgel verzehrt werden. Das popul\u00e4rste turkmenische Gericht ist Pilav, auch als Pilaf oder in Russland als Plov bezeichnet. Es wird mit Lammfleisch, Karotten, Reis und Zwiebeln zubereitet. Die meistverzehrte Frucht in Turkmenistan und in Zentralasien ist im Allgemeinen die Melone. Diese s\u00fc\u00dfe, k\u00f6stliche und wasserreiche Frucht wird als Nachspeise oder zum Tee serviert.
