Das Fleisch mit schwarzem Pfeffer, Curry oder Garam Masala, Salz und 1 EL \u00d6l in eine Sch\u00fcssel geben. Vermischen und mindestens zwei Stunden marinieren lassen.<br \/>\nEine Pfanne bei mittlerer bis hoher Hitze erhitzen. Die marinierten Fleischst\u00fccke 8 bis 10 Min. braten, bis sie gar sind, und dabei \u00f6fters wenden, damit sie nicht anbrennen.<br \/>\nAnweisungen f\u00fcr die Zubereitung der Korma-Sauce:<br \/>\n2 EL \u00d6l in einer Pfanne bei mittlerer Hitze erhitzen. Wenn das \u00d6l hei\u00df ist, Kreuzk\u00fcmmel und Nelken hinzuf\u00fcgen und anbraten, bis die Gew\u00fcrze knistern.<br \/>\nKnoblauch und Ingwer hinzuf\u00fcgen und 30 Sek. garen lassen. Die Zwiebel hinzuf\u00fcgen und bei st\u00e4ndigem Umr\u00fchren 10 Min. goldgelb braten (bei Bedarf etwas hei\u00dfes Wasser zugeben).<\/p>\n<p>Wenn die Zwiebel gar ist, Kurkuma, Curry, Garam Masala, Zimt, gemahlenen Koriander, schwarzen Pfeffer, gemahlenen Chili, Kardamom und Muskatnuss hinzuf\u00fcgen. Bei geringer Hitze 1 Min. garen. Die Gew\u00fcrze nicht anbrennen lassen!<br \/>\nDie Gew\u00fcrzmischung abk\u00fchlen lassen und dann in einem Mixer zerkleinern.<br \/>\nDie Mischung in die Pfanne mit dem Fleisch geben, Kokosmilch und Joghurt hinzuf\u00fcgen und unter Umr\u00fchren 2 Min. auf kleiner Flamme garen, damit der Joghurt nicht gerinnt. Die Hitze erh\u00f6hen und das Ganze zum Kochen bringen.<br \/>\nRohrzucker und gemahlene Mandeln hinzuf\u00fcgen.<br \/>\nGgf. salzen und 5 Min. garen. In den Regionen Jammu, Kaschmir und Ladakh ver\u00e4nderte sich die kulinarische Tradition im Lauf der Jahrhunderte. In erster Linie wurde sie von den Gerichten, die die Hindus und Buddhisten aus Kaschmir verzehrten, beeinflusst. Sp\u00e4ter von den Kulturen, die mit der Invasion ins Kaschmir aus dem Gebiet des heutigen Usbekistans kamen. Hauptzutat der Gerichte im Kaschmir ist Hammel. Normalerweise gesellen sich dazu weitere Zutaten wie Joghurt, \u00d6l und Gew\u00fcrze (Kurkuma, Chili, Kreuzk\u00fcmmel, Ingwer und Fenchel). Korma ist ein vermutlich aus Persien stammendes Gericht, das im 16. Jh. nach Indien importiert wurde.
