Die Garnelen aus der Pfanne nehmen und sch\u00e4len. Das Tomatenmark in den Garnelensud geben und vorsichtig einr\u00fchren. Die Eier hart kochen. In einer Pfanne die Butter zerlassen, das Mehl hinzuf\u00fcgen und etwa 3 bis 4 Min. anr\u00f6sten. Der Mehl-Butter-Mischung nach und nach den Garnelensud hinzuf\u00fcgen und umr\u00fchren. Salz, Pfeffer und Currypulver hinzuf\u00fcgen und 2 bis 3 Min. garen lassen. Vom Herd nehmen, die Garnelen in die Sauce geben und vorsichtig umr\u00fchren. Der Einsatz von Reis in der iranischen K\u00fcche verbreitete sich rasch im 16. Jh. Reis wurde fr\u00fcher im Norden des Iran und von der wohlhabenden Bev\u00f6lkerung gegessen, w\u00e4hrend in den \u00fcbrigen Teilen des Landes Brot das Hauptnahrungsmittel war. Heute werden die geschmacklich beliebtesten Reissorten im Nordiran angebaut.
